                                                 Zucchini Bread


3 eggs                                   2 cups raw, peeled, grated zucchini

1 cup oil                                2 cups sugar

3 cups flour                           1 tsp. salt

3 tsp. cinnamon                    1 tsp. baking soda

¼ tsp. baking powder          1 tsp. vanilla

                                                      ½ cup walnuts, finely chopped

 

In large bowl, beat eggs.  Add oil and sugar.  Mix well.  Add zucchini and dry ingredients. 

 

Pour into greased and floured loaf pans and bake at 325 ° for 60 – 75 minutes. 

Serve warm with butter.

 

Makes 2 loaves.

                                                                    Cardamom Braid


1 pkg. dry yeast                                4 tbsp. butter

2 ¾ -3 cups flour                              ½ tsp. salt

¾ tsp. ground cardamom                  ⅓ cup sugar

¾ cup milk                                        1 egg

 

In large bowl combine yeast, ¾ cup of the flour and cardamom. 

 

Heat milk, butter, sugar, and salt just til warm.  Add to dry ingredients. 

 

Add egg.   Beat at low speed for ½ minute.  Beat 3 minutes at high speed.

 

By hand, stir in enough flour to make moderately soft dough.  Knead 5 to 8 minutes. 

 

Place in greased bowl – turn once to grease top.  Cover and let rise about 1¼ hours. 

 

Punch down.  Divide in 3’s, form balls – rest 10 minutes.

 

Roll each into a 16 inch rope.  On a greased sheet, braid. 

 

Cover and let rise 40 minutes.  Brush with milk and 1 tbsp. sugar. 

 

Bake at 375° oven for 20 – 25 minutes.  Cool on wire rack.
