Au Gratin Potatoes

 

6 medium potatoes

2 tbsp. flour

1 medium onion – sliced

2 tbsp. butter

2 cups milk (approximately)

American cheese (about ½ pound)

 

Wash, pare and thinly slice potatoes.  Grease a baking dish.  Place of potatoes and half of onions in baking dish.  Sprinkle with salt and pepper and half the flour.  Dot with butter and cover with pieces of cheese.

 

Add next layer of potatoes, onion, salt, pepper, flour, butter and cheese.

 

Add final layer of potatoes, dot with butter, salt and pepper.  Add milk until milk comes to top when potatoes are pushed down.

 

Bake covered about an hour at 350°.

Green Bean Casserole

 

2 cans french cut green beans-drained

¾ cup milk

1 can cream of mushroom soup

tsp. pepper

1 can (2.8 oz) french fried onions

 

Heat oven to 350°.  Combine all ingredients except ½ can of onions.  Pour into 1 ½ quart casserole dish.  Bake, uncovered for 30 minutes or until hot.  Top with remaining onions, bake 5 minutes more or til onions are golden.

 

Serves 6.

Grilled Portobello Mushrooms

 

Clean and remove stems from 4 large portobello mushrooms.

 Marinate 45 minutes in ¼ cup olive oil, 1½ tbsp. red wine vinegar, 2 cloves minced garlic and ½ tsp. thyme.

Grill quickly – 3 to 4 minutes per side.

Sautéed Parsnips


Peel and trim ends of 4 - 5 parsnips.  Slice lengthwise about ¼ inch thick.

Boil in salted water until fork tender (about 10 minutes).  Drain.

Melt margarine in fry pan over low heat.  Place parsnips in pan, salt and pepper to taste.  Fry, turning occasionally, until lightly browned.

Serves 4.

Candied Sweet Potatoes

 

2 (15 oz.) cans sweet potatoes

1 (13 oz.) can pineapple tidbits

½ cup brown sugar (or to taste)

¼ cup margarine or butter

miniature marshmallows


 Drain off all but ¼ cup liquid from potatoes.  Potatoes may be cut into smaller pieces if desired. 

 

Drain pineapple.

 

In large saucepan melt butter.   Add brown sugar and reserved ¼ cup liquid from potatoes.  Add potatoes and pineapple.  Stir to coat.

 

Pour into casserole dish and bake at 350° for 20 minutes.

 

Top with marshmallows and bake an additional 10 minutes or until marshmallows are melted and lightly browned.
